You’ll be facing multiple enemies, including Android 17, Freiza, and Vegeta, before you get to Ultra Instinct Goku, so conserve as much health as you can.

Utilize your Sparking Meter

Sparking Meter is extremely important in this boss fight because Goku, in this form, makes it hard to land any attacks. Ultra Instinct Goku dodges most head-on attacks during the boss fight, making it tougher to deal with him.

Jiren Dragon Ball Sparking Zero

Hence, use Sparking attacks and ki charges whenever possible. Take any opportunity to charge up during the boss fight, as you’ll get really tight windows to do that.
