You you want complete control over your character’s build, then we recommend that you go classless in Tainted Grail The Fall of Avalon. You can become classless in the game by refusing to answer the guard during both his inquiries.
Once you do that, you will start the game with all of your base stats at 10. There will be no archetype and subclass bonus, and you will be able to distribute the points that you earn later in whichever way you want.
